Preheat the oven to 350°F (175°C). Grease a loaf pan.

Cut the black kabocha squash in half and remove the seeds. Place the squash halves on a baking sheet, cut side down, and roast in the preheated oven for about 45 minutes, or until the flesh is tender. Remove from the oven and let cool.

Scoop out the flesh of the roasted squash and mash it with a fork until smooth.

In a large bowl, combine the mashed squash, all-purpose flour, baking powder, cinnamon, nutmeg, salt, and sugar. Mix well.

Add the vegetable oil, unsweetened applesauce, and vanilla extract to the bowl. Stir until all the ingredients are well combined.

Fold in the chopped walnuts and raisins.

Pour the batter into the greased loaf pan and smooth the top.

Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
