Cook the rice noodles according to package instructions and keep aside.

In a pan, heat oil and add mustard seeds. Once they crackle, add urad dal, chana dal, curry leaves, green chilies, ginger, and cashew nuts. Saute until the cashews turn golden brown.

Add grated coconut and saute for a minute.

Add cooked rice noodles, salt, and lemon juice. Mix well.
