  1. In a food processor, combine seitan, chickpeas, onion, garlic, parsley, cumin, coriander, baking powder, salt, and black pepper. Pulse until well combined but still slightly chunky.
  2. Form the mixture into small balls or patties.
  3. Heat olive oil in a pan over medium heat. Fry the falafels until golden brown on all sides.
  4. Alternatively, preheat the oven to 400°F (200°C). Place the falafels on a baking sheet lined with parchment paper and bake for 20 minutes, flipping halfway through.
  5. In a small bowl, whisk together lemon juice and tahini to make the sauce.
  6. Serve the falafels in pita bread with lettuce, tomato, cucumber, and drizzle with the tahini sauce.
