Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until softened.

Add sliced zucchini and cook for another 5 minutes.

Pour in vegetable broth, season with salt and pepper, and bring to a boil.

Reduce heat and let simmer for 15 minutes, or until zucchini is tender.

Using an immersion blender, blend the soup until smooth.

Serve hot, garnished with fresh basil and a dollop of Greek yogurt.
