Peel and slice the parsnips into thick batons.

Peel the baby onions and cut them in half.

In a large bowl, toss the parsnips and baby onions with olive oil, brown sugar, salt, and black pepper.

Transfer the vegetables to a baking sheet and spread them out in a single layer.

Roast in the preheated oven for 25-30 minutes, or until the parsnips are caramelized and tender.
