Broccoli Peanut Salad
Broccoli is a member of the cabbage family and is rich in vitamins C and K, fiber, and various antioxidants. Peanuts are not actually nuts, but legumes!
This is vegan, gluten free and high protein recipe. Dish can be prepared in 45 minutes. Even a beginner can handle preparing this dish. Number of ingredients: 14.

Chop the broccoli into small florets and blanch in boiling water for 2 minutes. Drain and rinse with cold water.

In a large mixing bowl, combine the blanched broccoli, chopped red bell pepper, shredded carrot, thinly sliced red onion, and chopped cilantro.

In a separate small bowl, whisk together lime juice, peanut butter, soy sauce, maple syrup, minced garlic, grated ginger, salt, and black pepper.

Pour the dressing over the salad ingredients and toss until well coated.

Cover the salad and let it rest in the refrigerator for at least 30 minutes to allow the flavors to meld.

Before serving, sprinkle crushed peanuts on top for added crunch and flavor.
