Borscht is often considered the national dish of Ukraine and is a popular dish in many Eastern European countries.

  1. Peel and grate the beetroot, carrots, and onion. Chop the cabbage, potatoes, and garlic.
  2. Heat vegetable oil in a large pot and sauté the onion and garlic until fragrant.
  3. Add the grated beetroot and carrots, and cook for 5 minutes.
  4. Add the tomato paste, vinegar, bay leaf, salt, black pepper, and sugar. Stir well.
  5. Add the chopped cabbage, potatoes, and enough water to cover the vegetables. Bring to a boil.
  6. Reduce heat and simmer for about 45 minutes, or until the vegetables are tender.
  7. Remove from heat and let it rest for 10 minutes.
  8. Serve hot, garnished with sour cream and fresh dill.
