Preheat the oven to 350°F (175°C). Cut the pita bread into small pieces and toss with 1 tablespoon of olive oil. Spread the pita pieces on a baking sheet and bake for 10 minutes or until crispy.

In a large bowl, combine the chopped romaine lettuce, sliced cucumber, diced tomato, thinly sliced red onion, and chopped avocado.

In a separate bowl, whisk together the lemon juice, minced garlic, remaining olive oil, salt, and black pepper to make the mint vinaigrette.

Drizzle the mint vinaigrette over the salad and toss to combine.
