Cook the lasagna noodles according to the package instructions.

In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.

Add zucchini, mushrooms, and spinach to the skillet. Cook until vegetables are tender.

Stir in tomato sauce, Italian seasoning, salt, and black pepper. Simmer for 5 minutes.

In a separate bowl, mix ricotta cheese and vegan cheese.

Spread a thin layer of the vegetable sauce in a baking dish.

Layer lasagna noodles, vegetable sauce, and cheese mixture. Repeat until all ingredients are used, ending with a layer of cheese on top.
