Healthy Cabbage Rolls with Tofu

Preheat the oven to 375°F (190°C).

Bring a large pot of water to a boil.

Carefully remove the outer leaves of the cabbage head and blanch them in the boiling water for 2-3 minutes until softened. Remove and set aside.

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion, grated carrots, and minced garlic. Sauté until the vegetables are tender.

In a separate pan, cook the brown rice according to package instructions.

In a bowl, crumble the tofu and mix it with the cooked brown rice, sautéed vegetables, tomato sauce, salt, and pepper.

Place a spoonful of the tofu and rice mixture onto each cabbage leaf. Roll the leaf tightly, tucking in the sides as you go.

Place the cabbage rolls in a baking dish and pour vegetable broth over them.

Cover the dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10 minutes until the cabbage rolls are golden brown.

Let the cabbage rolls rest for 10 minutes before serving.
