Spiralize the zucchini to create noodles.

In a large skillet, heat olive oil over medium heat.

Add cherry tomatoes and cook until blistered, about 5 minutes.

In a food processor, combine basil leaves, pine nuts, garlic, olive oil, salt, and black pepper. Blend until smooth to make the pesto.

Add zucchini noodles to the skillet and cook for 2-3 minutes, until tender.

Remove from heat and toss with the blistered tomatoes and pesto.

Serve hot, garnished with Parmesan cheese.
