Peel and chop the root vegetables into bite-sized pieces.

Place the chopped vegetables, onion, garlic, ginger, cumin, coriander, cinnamon, paprika, cayenne pepper, vegetable broth, chickpeas, dried apricots, raisins, lemon juice, salt, and black pepper in a slow cooker.
