  1. Rinse the Puy lentils under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add the chopped onion, carrot, celery, and minced garlic to the pot. Sauté for 5 minutes or until the vegetables are softened.
  4. Add the Puy lentils, red wine, vegetable broth, bay leaf, thyme sprigs, salt, and black pepper to the pot. Stir well.
  5. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for 30 minutes or until the lentils are tender.
  6. Remove the bay leaf and thyme sprigs from the pot.
  7. Serve the wine-stewed Puy lentils hot, garnished with fresh parsley.
