  2. Peel and trim the carrots, then cut them into sticks.
  3. In a large bowl, toss the carrots with olive oil, salt, and black pepper.
  4. Spread the carrots in a single layer on a baking sheet.
  5. Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly caramelized.
  6. While the carrots are roasting, prepare the tahini turmeric dressing. In a small bowl, whisk together tahini, lemon juice, garlic, ground turmeric, and water until smooth.
  7. Once the carrots are done, remove them from the oven and let them rest for 5 minutes.
  8. Drizzle the tahini turmeric dressing over the roasted carrots.
