  1. Preheat the oven to 375°F (190°C). Cook the pasta according to the package instructions.
  2. In a large skillet, melt the vegan butter over medium heat. Add the onion and garlic, and sauté until softened.
  3. Add the mushrooms and cook until they release their moisture.
  4. Sprinkle the flour over the mushrooms and stir well to coat.
  5. Gradually whisk in the vegetable broth, nutritional yeast, soy sauce, and almond milk. Cook until the sauce thickens.
  6. Stir in the seitan, peas, salt, and black pepper. Cook for 2-3 minutes.
  7. Drain the cooked pasta and add it to the skillet. Stir well to combine.
  8. Transfer the mixture to a baking dish and sprinkle with bread crumbs.
  9. Bake for 20-25 minutes, or until the top is golden and crispy.
  10. Let it rest for 10 minutes before serving. Garnish with parsley.
