Heat olive oil in a large pot over medium heat. Add garlic, onion, leeks, celery, and bay leaves. Cook until vegetables are tender.

Add carrots and potatoes. Stir in thyme, salt, and pepper. Cook for 5 minutes.

Pour in vegetable stock and bring to a boil. Reduce heat and simmer for 20 minutes.

Remove bay leaves and blend half of the soup until smooth. Return to the pot and stir.

Serve hot, garnished with fresh parsley.
