  3. In a separate bowl, mix together the coconut oil, maple syrup, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  5. In a small bowl, combine the cinnamon and granulated sugar.
  6. Roll the dough into tablespoon-sized balls, then roll each ball in the cinnamon sugar mixture.
  7. Place the coated dough balls onto the prepared baking sheet and flatten them slightly with the palm of your hand.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Allow the snickerdoodles to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
