Quinoa Pilaf
Quinoa is actually a seed, not a grain, and is considered a complete protein.
This is vegan and gluten free recipe. Dish can be prepared in 35 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 13.

Rinse the quinoa under cold water.

In a saucepan, bring the vegetable broth to a boil.

Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes or until all the liquid is absorbed.

In a separate pan, heat olive oil over medium heat.

Add chopped onion and minced garlic, sauté until translucent.

Add diced carrot and bell pepper, cook until slightly tender.

Stir in frozen peas and dried cranberries.

Add the cooked quinoa to the pan and mix well.

Season with salt, black pepper, and lemon juice.

Cook for another 2-3 minutes until heated through.

Remove from heat and let it rest for 5 minutes.

Garnish with chopped parsley and serve hot.
