Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic cloves. Cook until onions are translucent.

Add chopped yellow bell peppers and cook for another 5 minutes.

Pour vegetable stock into the pot and bring to a boil. Reduce heat and simmer for 20 minutes.

Remove from heat and let it cool slightly. Use an immersion blender to puree the soup until smooth.

Return the soup to low heat and season with salt, black pepper, and lemon juice. Stir well.
