  1. In a large bowl, combine cooked quinoa, mashed black beans, grated carrot, grated zucchini, finely chopped red onion, minced garlic, chopped fresh parsley, ground flaxseed, whole wheat breadcrumbs, cumin powder, smoked paprika, salt, and black pepper. Mix well.
  2. Shape the mixture into patties and place them on a baking sheet lined with parchment paper.
  3. Heat olive oil in a frying pan over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown.
  4. Transfer the patties to a baking sheet and bake in a preheated oven at 180°C (350°F) for 10 minutes.
  5. Remove from the oven and let the patties rest for 10 minutes before serving.
  6. Serve the Veggie Quinoa Burgers on whole wheat buns with your favorite toppings and enjoy!
