Roasted Broccoli Stalks with Spicy Couscous (vegan)
Broccoli stalks are often discarded, but they are just as nutritious as the florets. They are rich in fiber, vitamins, and minerals, making them a great addition to any dish.

Preheat the oven to 400°F (200°C).

Peel the tough outer layer of the broccoli stalks and cut them into bite-sized pieces.

Toss the broccoli stalks with 1 tablespoon of olive oil, paprika, cayenne pepper, salt, and black pepper.

Spread the seasoned broccoli stalks on a baking sheet and roast in the preheated oven for 20 minutes, or until tender and slightly charred.

In a saucepan, bring the vegetable stock to a boil. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes.

Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the red bell pepper, red onion, and garlic cloves. Sauté until the vegetables are tender.

Fluff the couscous with a fork and transfer it to a large bowl. Add the sautéed vegetables, roasted broccoli stalks, lemon juice, and fresh parsley. Mix well.

Serve the roasted broccoli stalks with spicy couscous warm or at room temperature.
