The Nicoise salad originated in Nice, France and is named after the city’s cuisine. It traditionally includes tuna and anchovies, but this vegetarian version replaces them with fresh vegetables.

  1. Boil the potatoes until tender. Drain and let them cool.
  2. Blanch the green beans in boiling water for 3 minutes. Drain and transfer to ice water to cool.
  3. In a large bowl, combine the potatoes, green beans, cherry tomatoes, olives, red onion, capers, and mixed greens.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Peel and slice the hard-boiled eggs.
  7. Garnish the salad with the sliced eggs and fresh basil.
