Vegetable Tagine
Tagine refers to both the dish and the traditional clay pot used to cook it in Moroccan cuisine.

Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until fragrant.

Add carrots, potatoes, bell peppers, zucchini, and tomatoes. Stir in Ras el Hanout spice blend, cinnamon, salt, and black pepper.

Pour in vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 45 minutes, or until vegetables are tender.

Stir in lemon juice and fresh cilantro. Let it rest for 10 minutes before serving.

Serve hot with couscous or bread.
