  2. Roll out the puff pastry sheet and place it on a baking tray.
  3. Slice the zucchini, red bell pepper, yellow bell pepper, and red onion into thin strips.
  4. In a small bowl, mix olive oil, minced garlic, dried oregano, salt, and black pepper.
  5. Brush the puff pastry with the olive oil mixture.
  6. Arrange the vegetable strips on top of the puff pastry, alternating the colors.
  7. Sprinkle vegan cheese on top.
  8. Bake in the preheated oven for 25-30 minutes or until the pastry is golden and the vegetables are tender.
  9. Allow to cool for 10 minutes before cutting into squares.
  10. Serve warm.
