  1. Cook quinoa according to package instructions.
  2. In a large skillet or wok, heat sesame oil over medium heat.
  3. Add garlic, ginger, and green onions and sauté for 2 minutes.
  4. Add mixed vegetables and stir-fry for 3-4 minutes until tender-crisp.
  5. Push vegetables to one side of the skillet and add tofu. Cook for 2-3 minutes until heated through.
  6. Add cooked quinoa to the skillet and pour soy sauce over everything. Stir-fry for an additional 2-3 minutes.
  7. Season with salt and black pepper.
  8. Remove from heat and let it rest for 5 minutes.
  9. Serve hot and enjoy!
