This is vegan, gluten free and high protein recipe. Dish can be prepared in 35 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Cook quinoa according to package instructions.

In a large skillet or wok, heat sesame oil over medium heat.

Add garlic, ginger, and green onions and sauté for 2 minutes.

Add mixed vegetables and stir-fry for 3-4 minutes until tender-crisp.

Push vegetables to one side of the skillet and add tofu. Cook for 2-3 minutes until heated through.

Add cooked quinoa to the skillet and pour soy sauce over everything. Stir-fry for an additional 2-3 minutes.

Season with salt and black pepper.

Remove from heat and let it rest for 5 minutes.
