Fried rice is believed to have originated in China during the Sui Dynasty (589-618 AD). It was originally made to use up leftover rice and ingredients.

  1. Cook the rice according to package instructions. Set aside.
  2. In a large pan, heat the sesame oil over medium heat. Add the onion and garlic, and sauté until fragrant.
  3. Add the mixed vegetables and cook until tender.
  4. Push the vegetables to one side of the pan and add the cooked rice to the other side. Stir-fry for a few minutes.
  5. Season with soy sauce, salt, and pepper. Mix well.
  6. Remove from heat and let it rest for 5 minutes.
  7. Garnish with chopped scallions before serving.
