Cook the noodles according to package instructions. Drain and set aside.

Heat vegetable oil in a pan or wok over medium heat. Add garlic and ginger, stir-fry for 1 minute.

Add carrots, bell peppers, and cabbage. Stir-fry for 3-4 minutes until vegetables are slightly tender.

Add cooked noodles, soy sauce, sesame oil, salt, and pepper. Stir-fry for another 2-3 minutes until everything is well combined.

Remove from heat and garnish with spring onions.

Let it rest for 5 minutes before serving.
