  1. In a saucepan, combine wild rice and vegetable broth. Bring to a boil, then reduce heat to low and simmer for about 30 minutes or until rice is tender.
  2. While the rice is cooking, prepare the vegetables. Slice the red bell pepper, yellow bell pepper, and red onion into thin strips.
  3. In a large skillet, heat a bit of oil over medium heat. Add the sliced vegetables and frozen corn. Cook until vegetables are tender.
  4. Once the rice is cooked, fluff it with a fork and add it to the skillet with the cooked vegetables. Stir in the black beans, hummus, lime juice, salt, black pepper, cumin, and chili powder. Cook for a few more minutes until everything is well combined.
  5. Warm the tortillas in a dry skillet or microwave.
  6. Spoon the vegetable and rice mixture onto each tortilla. Top with fresh cilantro.
  7. Roll up the tortillas tightly, tucking in the sides as you go.
  8. Place the burritos in a freezer-safe container or wrap them individually in foil.
  9. To reheat, remove from the freezer and microwave for 2-3 minutes or until heated through.
