Green Beans with Pickled-Onion Relish

Trim the ends of the green beans and blanch in boiling water for 3-4 minutes. Drain and set aside.

Slice the red onion thinly and place in a bowl. Add white vinegar, sugar, and a pinch of salt. Let it sit for 10 minutes to pickle.

Heat olive oil in a pan over medium heat. Add minced garlic and sauté for a minute.

Add the blanched green beans to the pan and season with salt and black pepper. Cook for 5-6 minutes, until the beans are tender.

Remove the pickled onions from the vinegar and add them to the pan with the green beans. Stir well to combine.

Cook for an additional 2-3 minutes, until the flavors are well blended.

Serve the green beans with pickled-onion relish as a side dish.
