Heat oil in a large pan over medium heat. Add chopped onions, minced garlic, and grated ginger. Cook until onions are translucent.

Add curry powder, turmeric, cumin powder, coriander powder, and chili powder. Stir well to combine.

Add diced potatoes, sliced carrots, green beans, and cauliflower florets. Stir to coat the vegetables with the spices.

Pour in coconut milk and diced tomatoes. Season with salt. Bring to a simmer and cook for 20 minutes, or until the vegetables are tender.

Stir in fresh coriander and lemon juice.
