  3. Add diced potatoes, sliced carrots, green beans, and cauliflower florets. Stir to coat the vegetables with the spices.
  4. Pour in coconut milk and diced tomatoes. Season with salt. Bring to a simmer and cook for 20 minutes, or until the vegetables are tender.
  5. Stir in fresh coriander and lemon juice.
