Awesome Marinated Sweet Potato Salad
Sweet potatoes are not only delicious but also packed with nutrients. They are a great source of fiber, vitamins A and C, and antioxidants.

Preheat the oven to 400°F (200°C). Peel and cube the sweet potatoes.

In a large bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, minced garlic, salt, and black pepper.

Add the sweet potatoes to the bowl and toss to coat them in the marinade.

Arrange the sweet potatoes in a single layer on a baking sheet and roast for 25 minutes, or until they are tender and slightly caramelized.

While the sweet potatoes are roasting, thinly slice the red onion and chop the fresh parsley.

Once the sweet potatoes are done, let them cool for 5 minutes.

In a large serving bowl, combine the roasted sweet potatoes, sliced red onion, chopped parsley, pecans, and crumbled feta cheese.

Toss everything together gently.

Let the salad rest for 30 minutes to allow the flavors to meld together.
