  1. Wash and soak the basmati rice for 30 minutes.
  2. Heat ghee in a pan and add cumin seeds, cinnamon stick, cardamom pods, cloves, and bay leaf. Fry for a minute.
  3. Add chopped onions and sauté until golden brown.
  4. Add ginger-garlic paste and green chilies. Sauté for a minute.
  5. Add chopped tomatoes and cook until they turn soft.
  6. Add biryani masala powder, turmeric powder, red chili powder, and salt. Mix well.
  7. Add mixed vegetables and cook for 2-3 minutes.
  8. Drain the soaked rice and add it to the pan. Mix gently.
  9. Add water and bring it to a boil. Cover and cook on low heat for 15-20 minutes or until the rice is cooked.
  10. In a separate pan, heat ghee and fry cashew nuts and raisins until golden brown.
  11. Once the rice is cooked, remove from heat and let it rest for 10 minutes.
  12. Garnish with fried cashew nuts, raisins, fresh coriander leaves, and mint leaves.
  13. Serve hot with raita or yogurt.
