Rinse the rice under cold water until the water runs clear. Drain well.

In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic. Cook until the onion is translucent.

Add the rinsed rice to the skillet and cook, stirring constantly, for 2 minutes.

Stir in the tomato paste, cumin powder, chili powder, and salt. Cook for an additional 2 minutes.

Add the canned diced tomatoes and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes or until the rice is tender and the liquid is absorbed.

Remove from heat and let the rice rest for 5 minutes.

Fluff the rice with a fork and stir in the chopped cilantro and lime juice.

Serve the Tex-Mex Mexican Rice with sliced avocado and tortilla chips.
