Vegetable Biryani
Biryani is a popular dish in India and has many regional variations. It is often served with raita or a side salad.

Wash and soak the basmati rice for 30 minutes.

Heat ghee in a pan and add cumin seeds, bay leaf, cinnamon stick, cloves, and cardamom pods.

Add chopped onions and sauté until golden brown.

Add ginger-garlic paste, green chili, and sauté for a minute.

Add chopped tomatoes and cook until they turn soft.

Add turmeric powder, biryani masala powder, and mix well.

Add mixed vegetables, cashews, raisins, and salt. Cook for 5 minutes.

Drain the soaked rice and add it to the pan. Mix well.

Add water, cover the pan, and cook on low heat until the rice is cooked and the flavors are well blended.

Let it rest for 10 minutes before serving.
