Heat vegetable oil in a large pan over medium heat.

Add minced garlic and grated ginger, sauté for a minute.

Add chopped onion, bell pepper, carrot, potato, and green beans. Sauté for 5 minutes.

Add curry powder, turmeric powder, cumin powder, coriander powder, and red chili flakes. Stir well to coat the vegetables.

Pour in coconut milk and vegetable broth. Bring to a simmer and cook for 15 minutes or until the vegetables are tender.

Season with salt and lime juice. Stir well.

Remove from heat and let it rest for 5 minutes.
