Spicy Lentil and Sweet Potato Stew with Chipotles

Rinse the lentils and set aside.

Peel and dice the sweet potatoes.

Chop the onion and mince the garlic.

Heat oil in a large pot over medium heat.

Add the onion and garlic, and cook until softened.

Add the sweet potatoes, lentils, vegetable broth, chipotle peppers, cumin, coriander, paprika, salt, and black pepper.

Bring to a boil, then reduce heat and simmer for 30 minutes, or until the lentils and sweet potatoes are tender.

Stir in the lime juice and fresh cilantro.

Let the stew rest for 10 minutes before serving.
