Lentils are one of the oldest cultivated crops and have been a staple food in many cultures for thousands of years.

Rinse the lentils under cold water.

In a large pot, heat olive oil over medium heat.

Add onion, garlic, carrot, and celery. Sauté until vegetables are tender.

Stir in cumin, paprika, salt, and black pepper.

Add lentils, tomato, and vegetable broth. Bring to a boil.

Reduce heat, cover, and simmer for 25-30 minutes or until lentils are tender.

Remove from heat and let it rest for 5 minutes.

Garnish with fresh parsley before serving.
