  4. Add carrot, zucchini, bell pepper, and dried herbs. Cook for 5 minutes or until vegetables are tender.
  5. Stir in cooked quinoa, frozen peas, salt, and black pepper. Cook for an additional 5 minutes.
  6. Remove from heat and stir in lemon juice and fresh parsley. Let it rest for 5 minutes before serving.
