Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a small bowl, mix the ground flaxseed with water and let it sit for 5 minutes to form a flax egg.

In a large mixing bowl, combine almond flour, gluten-free all-purpose flour, baking powder, and salt.

In a separate bowl, whisk together the flax egg, coconut oil, maple syrup, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until a dough forms.

Fold in the chopped almonds.

Transfer the dough onto the prepared baking sheet and shape it into a log, about 12 inches long and 4 inches wide.

Bake for 25-30 minutes, or until golden brown.

Remove from the oven and let it cool for 10 minutes.

Reduce the oven temperature to 325°F (160°C).

Using a sharp knife, cut the log into 1-inch thick slices.

Place the biscotti slices back onto the baking sheet, cut side down, and bake for an additional 10 minutes.
