  1. Cut the tempeh into cubes and marinate with lemon juice, olive oil, Dijon mustard, maple syrup, salt, and black pepper for 10 minutes.
  2. Preheat a grill pan over medium heat and cook the marinated tempeh for 5 minutes on each side.
  3. In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and avocado.
  4. In a small bowl, whisk together lemon juice, olive oil, Dijon mustard, maple syrup, salt, and black pepper to make the dressing.
  5. Pour the dressing over the salad and toss to combine.
  6. Top the salad with the grilled tempeh.
  7. Serve immediately and enjoy!
