  2. In a large bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, salt, and poppy seeds.
  3. In a separate bowl, mix together the coconut oil, maple syrup, lemon juice, almond milk, lemon zest, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the muffins cool in the tin for 5 minutes.
