  2. In a large mixing bowl, combine rolled oats, almonds, cashews, pumpkin seeds, and sunflower seeds.
  3. In a small saucepan, melt coconut oil over low heat. Add honey, vanilla extract, and cinnamon. Stir until well combined.
  4. Pour the honey mixture over the dry ingredients and mix until everything is well coated.
  5. Spread the mixture onto a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown.
  7. Remove from the oven and let it cool completely.
  8. Once cooled, add dried cranberries and mix well.
  9. Store in an airtight container.
