Cashew nuts are not actually nuts, but seeds that grow outside the fruit.

This is vegan, gluten free and high protein recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 15.

  1. Heat oil in a pan and sauté chopped onion, garlic, and ginger until golden brown.
  2. Add sliced mushrooms and cook until they release their moisture.
  3. Add chopped tomatoes and cook until they turn soft.
  4. In a blender, blend cashew nuts, almonds, and coconut milk until smooth.
  5. Add the blended mixture to the pan and mix well.
  6. Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well.
  7. Simmer the curry for 15-20 minutes until the flavors blend together.
  8. Garnish with fresh coriander leaves.
  9. Serve hot with rice or naan bread.
