In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, and thyme sprig. Cook until onion is translucent.

Add rice, pigeon peas, coconut milk, water, scotch bonnet pepper, salt, and black pepper to the pot. Stir well.

Bring the mixture to a boil, then reduce heat to low. Cover the pot and let it simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.

Remove from heat and let it rest for 5 minutes.

Fluff the rice with a fork before serving. Remove the thyme sprig and scotch bonnet pepper if desired.
