Vegan Blueberry Bars

Preheat the oven to 350°F (175°C). Grease a baking dish.

In a large bowl, combine oats, almond flour, coconut oil, maple syrup, vanilla extract, and salt. Mix well.

Press half of the oat mixture into the bottom of the prepared baking dish.

In a separate bowl, mix blueberries, lemon juice, and cornstarch until well combined.

Spread the blueberry mixture evenly over the oat mixture in the baking dish.

Sprinkle the remaining oat mixture over the blueberries.

Bake for 35-40 minutes, or until the top is golden brown.

Remove from the oven and let it cool completely before cutting into bars.
