Preheat the oven to 200°C (400°F). Roast the eggplants for 25-30 minutes or until the skin is charred.

Peel and chop the roasted eggplants.

In a pan, heat olive oil and sauté the chopped onion, garlic, and bell peppers until softened.

Add the chopped tomatoes and cook until they are soft.

Add the roasted eggplants to the pan and mix well. Cook for another 5-10 minutes.

Season with salt and black pepper.
