Rinse the rice under cold water until the water runs clear.

In a saucepan, combine the rice, coconut milk, and 1 cup of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.

Meanwhile, chop the pineapple, bell pepper, red onion, garlic, and ginger.

In a large skillet, heat some oil over medium heat. Add the chopped vegetables and sauté for 5 minutes.

Add turmeric, curry powder, and salt to the skillet. Stir well.

Once the rice is cooked, fluff it with a fork and add it to the skillet. Mix everything together.

Cook for an additional 5 minutes, stirring occasionally.

Remove from heat and let it rest for 5 minutes.

Garnish with chopped cilantro and squeeze lime juice over the dish.
