Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic cloves. Cook until onion is translucent.

Add chopped tomatoes, vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.

Remove from heat and let it cool slightly. Use an immersion blender or transfer to a blender to puree until smooth.

Return the soup to the pot and heat over low heat. Stir in fresh basil and heavy cream (optional) until well combined.

Serve hot and garnish with additional fresh basil if desired.
