  1. Rinse the quinoa thoroughly and cook according to package instructions. Once cooked, fluff it with a fork and let it cool.
  2. In a large bowl, combine the cherry tomatoes (halved), canned chickpeas (drained and rinsed), finely chopped red onion, diced cucumber, chopped fresh parsley, and chopped fresh mint.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  4. Add the cooked quinoa to the large bowl of vegetables and pour the dressing over it. Toss everything together until well combined.
  5. Let the salad rest for 5 minutes to allow the flavors to meld together.
