Peel and grate the beetroot.

In a large pan, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until translucent.

Add grated beetroot and cook for 5 minutes.

Add Arborio rice and stir well to coat the grains with oil.

Gradually add vegetable broth, one ladle at a time, stirring constantly until the liquid is absorbed.

Continue adding broth and stirring until the rice is cooked al dente, about 20-25 minutes.

Stir in nutritional yeast, fresh thyme leaves, salt, and black pepper.

Remove from heat and let it rest for 5 minutes.
